Being a full-time student, finding the time to sit down and have a worthy meal three times a day can be a challenge. These Cranberry and White Chocolate Oatmeal Bars sound soo delicious and would be perfect to snack on on-the-go! Since the recipe yields 8 oatmeal bars, I could easily make a batch ahead of time and bring them to school to snack on throughout the day. I can’t wait to give them a try!
- 1 1/2 cups of old fashioned oatmeal, uncooked
- 1/2 cup of chopped pecans (or almonds)
- 1/4 cup honey
- 1/3 cup dried cranberries
- 1/2 cup white chocolate chips
Spread oatmeal on a baking sheet and stick in the oven at 350°F until slightly golden brown. Once oatmeal is done pull out of the oven and place in bowl with chopped pecans, and cranberries. Measure honey and 1/4 cup of white chocolate chips into a sauce pan over low/medium heat until chocolate melts. Pour honey over oatmeal mixture and stir to combine. Spray a 9×9 inch glass baking dish with cooking spray and pour mixture into baking dish, pushing down until it is an even layer on the bottom.
