Gluten free Banana, coconut, berry and white chocolate muffins

photo (1) For breakfast over the weekend I made these gluten free muffins, they  would have been dairy free as well (and a lot healthier) if I had of left out the white chocolate but they were delicious so what’s a couple of chocolate chips every now and again..

I’ve only really just started cooking gluten free and most of my attempts haven’t worked, they usually come out very dry, but these were perfect.

Ingredients

  • 1 1/2cups gluten free self-raising flour. I used Orgran, available in the health food aisle of your supermarket.
  • 1/2 cup of coconut flour
  • 1/2 cup shredded coconut
  • 1/2 cup coconut sugar
  • 1/4 cup of agave
  • 2 very ripe bananas, mashed
  • 50g coconut oil, liquefied
  • 1/2 cup almond milk
  • 1 teaspoon vanilla essence
  • 2 eggs
  • I cup berries, fresh or frozen. I like frozen because as they are defrosting the juices run through the muffins
